Abstract AIM The aim of this study was to examine the influence of the type of beverage and the use of thirst sensation to guide fluid replacement in the adolescent judokas. METHODS Nine male judokas aged 10-16 (average age 11,8 ± 4,0 years old) were submitted to a standardized training of 90 minutes. In the first phase of the study, the athletes completed the training with ingestion ad libitum of different beverages: day 1 (water) and after 48 hours, day 2 (sports drink). In the second phase, after 7 days of first stage, the athletes completed the training with ingestion of water or sports drink, guided by thirst sensation. The total volume of liquids ingested (VI) during the training was quantified and the level of dehydration was determined by variation of body weight before and after training (∆W). At the end of each training, the athletes were asked about the training intensity to determine perceived exertion (PE). RESULTS No differences were observed in weight loss (∆W) (range: -0,04 ± 0,4 to -0,69 ± 1,1 %) and perceived exertion (range: 3,2 to 5,0). The use of thirst sensation to guide fluid replacement reduced the total fluid intake when the beverage offered was the sports drink (no thirst vs. thirst sensation, 521,1 ± 290 vs 152,2 ± 187 mL - p=0,006). CONCLUSION The results suggest that fluid replacement guided by thirst sensation can be influenced by the type of beverage offered.

RESUMO Yacon (Smallanthus sonchifolius) é uma raiz tuberosa da região andina na América do Sul, rica em água, frutooligossacarídeos e compostos fenólicos, alguns dos quais são antioxidantes naturais e podem auxiliar a prevenir a ação deletéria dos radicais livres no organismo. O yacon tem atraído muita atenção devido a seus potenciais benefícios de saúde para os seres humanos. Neste estudo, os níveis de fenólicos totais, taninos, ácidos fenólicos e atividade antioxidante total foram mensurados na casca e polpa de túberas de yacon ambas nas formas fresca e de farinha. As farinhas de yacon apresentaram altas concentrações de fenólicos totais e taninos, especialmente a farinha da casca. A farinha da polpa de yacon destacou-se como a principal fonte de ácidos fenólicos, principalmente caféico e ácido clorogênico. A atividade antioxidante total avaliada pelos métodos DPPH (2,2-Difenil-1-picril-hidrazil) and ABTS (2,2′-Azino-bis (3-etilbenzotiazolina-6-ácido sulfônico)) foi maior na farinha de casca de yacon. A atividade antioxidante total foi correlacionada com o conteúdo de fenólicos totais e taninos pelos métodos DPPH e ABTS. Estes resultados sugerem que yacon pode ser usado como uma fonte alimentar alternativa de compostos fenólicos que auxiliam a prevenir processos degenerativos causados pelo estresse oxidativo, especialmente na forma de farinhas.

ABSTRACT Yacon (Smallanthus sonchifolius) is a tuberous root from the Andean region in the South America rich em water, fructooligosaccharides and phenolic compounds, some of which are natural antioxidants and may help prevent the deleterious action of free radicals in the body. The yacon has attracted much attention due to their potential health benefits to humans. In this study the levels of total phenolics, tannins, phenolic acids, and total antioxidant activity were measured in the peel and pulp of yacon tubers both in the fresh and flour forms. The flours of yacon presented higher concentrations of total phenolics and tannins, especially peel flour. The yacon pulp flour stood out as the main source of phenolic acids, mainly caffeic and chlorogenic acid. The total antioxidant activity assessed by DPPH (2,2-Diphenyl-1-picrylhydrazyl) and ABTS (2,2′-Azino-bis (3-ethylbenzothiazoline-6-sulfonic acid)) assays was higher in the yacon peel flour. The total antioxidant activity was correlated with the total phenolic content and tannins by the DPPH and ABTS assays. These results suggest that yacon can be used as an alternative food source of phenolic compounds that help prevent degenerative processes caused by oxidative stress, especially in the flours form.

Conduziu-se o presente estudo, com o objetivo de avaliar o efeito de diferentes tipos de fibras sobre as fraçoes lipídicas do sangue e fígado de ratos. Para determinar o efeito da pectina citrica, goma guar e celulose sobre o perfil lipidico dos ratos utilizaramse 36 ratos machos da linhagem wistar. Os ratos foram distribuidos aleatoreamente em seis grupos. Cada gruopo foi submetido a uma dieta por 58 dias. As dietas utilizadas foram: A- 10% de pectina, B - 15% de pectina, C - 10% de goma guar, D- 15% de goma guar, E - 5% de Celulose sem colesterol e F - 5% celulose com 1% de colesterol. A pectina e a goma guar evitaram o aumento do colesterol total e LDL-c sérico observado na dieta F (p<0,05). Não houve diferença significativa entre os tipos de fibras e a quantidades utilizadas. Os níveis séricos HDL-c, VLDL-c e TAG permaneceram inalterados em todos os tratamentos. Os resultados mostram o potencial efeito benéfico da ingestão das fibras solúveis pectina e goma guar no controle da colesterolemia.

The present study was designed to evaluate the effect of different types of fibers on lipid portions of mice blood and liver. To determine the effect of citric pectin, guar gum and cellulose on the rat lipid profile, 36 male mice of the Wistar strain were utilized. The mice were allocated randomly into six groups. Each group was submitted to an experimental diet for 58 days. The utilized diets were: A- 10% pectin, B - 15% pectin, C - 10% guar gum, D- 15% guar gum, E - 5% cellulose with no cholesterol and F - 5% cellulose with 1% cholesterol. Pectin and guar gum prevented the increase of total cholesterol and serum LDL-c found in diet F (p<0.05). There was no significant difference among the types of soluble fibers and the amounts utilized. The serum levels HDL-c, VLDL-c, and TAG did not alter in all the treatments. The results show the potential beneficial effect of the ingestion of the soluble fibers pectin and guar gum in cholesterolemia control.

Resumo O objetivo deste estudo foi avaliar o consumo alimentar, identificar a ingestão de energia e nutrientes da dieta, bem como os hábitos alimentares dos idosos cadastrados no Programa Municipal da Terceira Idade (PMTI), no município de Viçosa-MG. O consumo alimentar foi avaliado em 183 idosos com idade entre 60 e 90 anos, por meio da soma do consumo encontrado entre o Recordatório 24 horas e o questionário de Freqüência Alimentar Semiquantitativo. Para a adequação do consumo de nutrientes e energia, foi utilizado um cálculo baseado na Ingestão Dietética de Referência (DRI). A ingestão energética ficou abaixo da necessidade estimada para quase todos os idosos, observando-se elevada ingestão de energia de fontes lipídicas (52,5%). Verificou-se alta freqüência de inadequação no consumo de vitaminas (vitaminas C, A, B1, B2 e B6). O consumo de cálcio foi 1/3 do valor recomendado. Dos idosos estudados, quase todos apresentaram ingestão energética abaixo da necessidade energética estimada (EER). Observou-se um desbalanceamento na dieta, havendo alta prevalência de inadequação no consumo de proteínas, vitaminas e minerais na alimentação dos idosos estudados.

Abstract This study aims to evaluate food consumption, to identify the ingestion of energy and dietary nutritients of the diet, as well as eating habits of elderly registered in the Municipal Program of the Third Age (PMTI), in the municipal district of Viçosa-MG. Food consumption was evaluated in 183 seniors aged from 60 to 90 years, through the sum of consumption found between the 24hour-Recall and the Semi-quantitative questionnaire of Alimentary Frequency. To adapt consumption of nutrients and energy, we used a calculation based on the Dietary Ingestion of Reference (DRI's). Energy ingestion was below the estimated need for almost all seniors, and a high ingestion of energy of lipidic sources (52.5%) was observed. Highly inadequate frequency was verified in the consumption of vitamins (vitamins C, THE, B1, B2 and B6). Calcium consumption 1/3 of the recommended value. Unbalance in the diet was observed, with a high prevalence of inadequate in the consumption of proteins, vitamins and minerals in the diet of the elderly people studied.

Resumo Este trabalho teve como objetivo caracterizar o estado nutricional dos idosos cadastrados no Programa Municipal da Terceira Idade (PMTI) situado em Viçosa, Minas Gerais. A população estudada constituiu-se de 183 idosos com idade entre 60 e 90 anos, assistidos pelo PMTI de Viçosa. Os idosos foram avaliados pelo método antropométrico, utilizando-se peso, altura, circunferências da cintura e do quadril para calcular a relação cintura/quadril (RCQ) e o índice de massa corporal (IMC). O perfil nutricional do grupo apresentou uma bipolarização, com alta prevalência de sobrepeso (40,8%) e baixo-peso (15,1%). A freqüência de CC (circunferência da cintura) aumentada e de RCQ inadequada foi alta em ambos os sexos (61,4%), sendo significativamente maior nas mulheres. Os resultados encontrados apresentam uma situação preocupante dessa população, sendo necessário adotar medidas de controle e prevenção do sobrepeso, destacando-se o baixo-peso como importante fator de risco de mortalidade entre idosos.

Abstract This paper aimed to characterize the nutritional state of elders who participate in the Municipal Program of the Third Age (PMTI) in Viçosa, state of Minas Gerais. The study population was 183 elders aged between 60 and 90 years, attended by PMTI of Viçosa. The elders were evaluated through the anthropometric method, using weight, height, waist and hip circumferences to calculate the waist-to-hip ratio (W/H) and the body mass index (BMI). The group’s nutritional profile was bipolarization, with prevalences of high overweight (40,8%) and low weight (15,1%). The frequency of WC (waist circumference) increased and inadequate RCQ was high for both sexes (61,4%), being significantly larger between women. Results presented a preoccupying situation for that population, and pointed to need for taking controlling measures and overweight prevention, highlighting the low-weight as an important risk factor for morbimortality among elderly people.

As proteínas do soro do leite, também conhecidas como whey protein, são extraídas durante o processo de fabricação do queijo. Possuem alto valor nutricional, contendo alto teor de aminoácidos essenciais, especialmente os de cadeia ramificada. Também apresentam alto teor de cálcio e de peptídeos bioativos do soro. Pesquisas recentes demonstram sua grande aplicabilidade no esporte, com possíveis efeitos sobre a síntese protéica muscular esquelética, redução da gordura corporal, assim como na modulação da adiposidade, e melhora do desempenho físico. Estudos envolvendo a análise de seus compostos bioativos evidenciam benefícios para a saúde humana. Entre esses possíveis benefícios destacam-se seus efeitos hipotensivo, antioxidante e hipocolesterolêmico. Esta revisão buscou trabalhos que trazem avaliação das propriedades funcionais das proteínas do soro, tanto em humanos como em animais. Apesar das evidências apresentadas, novos estudos, assim como o desenvolvimento de novos alimentos enriquecidos com as proteínas do soro, com o intuito de facilitar seu consumo por grandes grupos populacionais, são necessários para verificar sua real eficácia.

The soluble proteins of milk, also known as whey protein, are extracted during the cheese manufacturing process. They have high nutritional value, with high levels of essential amino acids, especially branched chain amino acids. They also have a high level of calcium and whey bioactive peptides. Recent researches have shown their wide application for sports with possible effects on skeletal muscle protein synthesis, reduction of body fat, as well as adiposity modulation, and improved muscle performance. Researches involving the analysis of their bioactive compounds have also shown benefits to human health. Among these benefits, their hypotensive, antioxidant, and hypocholesterolemic effects stand out. This review has searched scientific articles that evaluate the functional properties of whey protein, both in humans and animals. Despite this evidence, new researches, as well as the development of new whey protein-enriched foods to increase their consumption by the population, are necessary to check their real effectiveness.
